Spawn a new item display by sneaking and dropping the item that you want to display

Use the adjuster tool (Amethyst Shard by default) to open the adjuster interface (Sneak and right click)

Use left or right click while holding the adjuster tool to perform your action

Sneak and hit an item display to select/deselect it
