Fixes an issue with running the plugin on newer versions of Java.

Update to 1.17 courtesy of hyperdefined
Additional checks to hopefully prevent errors if NMS changes versioning

Replaced the default Bukkit logger with the plugin specific logger for better clarity of log messages, courtesy of hyperdefined.

This update does not make any changes to the functionality of the plugin and is not strictly necessary.

Configuration error in buildscript was causing plugin to be unable to load when bStats was enabled.

Update is unnecessary if the plugin is currently working.
Shows more debug messages to troubleshoot if the plugin is not working.

Fixed error message not printing when unable to initialize and added bStats for more information on how the plugin is being used.
