This works only for velocity, not bungee! if you wanna use bungee, use this instead.
Anyway,
This plugin make possible changing protocol version, simple as that.
Instructions:

• Upload into folder plugins.
• Restart server.
• Go to newly created folder velocityprotocolchanger.
• Open config.properties.
• Rewrite protocol Velocity Server into whathever you want.
